Description: With just 5 ingredients you can make the most stunning of all apple desserts, an upside-down apple tart known as Apple Tarte Tatin, that is named for the two sisters who invented it. APPLE TART TATIN WITH PUFF PASTRY SERVES 8 6 to 8 golden delicious apples, peeled, cored, and halved Juice of 1 lemon 6 tablespoons unsalted butter 1 cup sugar 1 sheet frozen puff pastry Whipped cream or vanilla ice cream, for serving (optional) Preheat the oven to 400 degrees. In a large bowl, toss apple halves with lemon juice and set aside. In a 9 to 10-inch skillet, melt butter over high heat. Add sugar and cook, swirling skillet, until sugar has melted and is amber in color. Do not stir or sugar may crystallize. Remove skillet from the heat. Carefully, place apples in a single layer, rounded side down, in skillet. Cut remaining apple halves in half and neatly arrange, cut side down, over apple halves. Cover skillet and cook over medium-low heat until apples are almost tender and have released their juices, 15 to 20 minutes. Uncover and increase heat to medium and cook until the juices have reduced and are very thick and syrupy, about 15 minutes. Place pastry on worksurface and let stand at room temperature until slightly softened, about 5 minutes. Dust worksurface, pastry, and a rolling pin lightly with flour. Roll pastry out to a 12-inch round about 3/16-inch thick. Place pastry over cooked apples and carefully tuck edges into the skillet around the apples. Using a paring knife, cut several slits in the dough to allow the steam to escape while baking. Transfer skillet to oven and bake until crust is golden, about 20 minutes. Remove from the oven and let cool for 5 minutes. Using a small knife, run it around the perimeter of the skillet to loosen tart. Invert a large serving plate and place over the skillet. Using oven mitts, carefully grasp plate and skillet and quickly invert, letting the tart settle onto the plate. If necessary, give the skillet a quick tap to release the tart from the skillet. Once released, lift skillet, and transfer any apples in skillet to the top of the tart. Let tart cool slightly before serving warm with whipped cream or ice cream, if desired.
